A maze is a puzzle you walk through: every turn is a choice, and some lead nowhere. Mazes tend to show up in dreams when you're working through a tangled situation where every option seems to lead to two more, such as a decision, a relationship or a long project. Dead ends can feel frustrating, but they also rule out wrong paths. Hedges too tall to see over add to the feeling that the answer is close but hidden.
